White Bean & Smoked Sausage Soup

Skill required: Beginner. 6 cups chicken broth
2 medium potatoes - peeled and diced
2 carrots - peeled and diced
1 medium onion - chopped
2 stalks celery - diced
2 - 15 oz cans white beans - drained
1 lb smoked sausage - chopped
1/4 teaspoon cayenne pepper - optional
1 tablespoon Worcestershire sauce
1/4 cup chopped fresh parsley
salt and pepper to taste1. In a large cooking pot, boil potatoes, carrots, onion and celery in the chicken broth until tender.
2. Add beans, sausage, and seasonings.
3. Bring soup back to a slow boil, then reduce to a simmer and cook for approximately 1 hour.
Yield: @ 8 servings
