Kasha Varnishkas

3 large onions, sliced
Olive oil - enough to sauté onions
1 egg
1 cup kasha (coarse or whole)
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups (16 ounces) chicken OR beef broth
1/2 pound bowtie noodles (farfalle)

1. Heat olive oil in shallow heavy duty cookpot.

2. On medium heat, sauté onions slices, one onion at a time until all are golden and transparent in color.

3. Beat egg in small bowl.

4. Add kasha, salt and pepper and mix well. Kasha will be sticky.

5. Add kasha to onions; mix to combine.

6. Add 16 ounces of broth. (I use 1 cup chicken broth & 1 cup beef broth.)

7. Bring to boil, then cover and simmer for 30 minutes.

8. While kasha is cooking, boil water for bowtie noodles. Cook according to directions.

9. Remove kasha from heat; drain water from bowtie noodles.

10.In a large serving bowl, combine kasha/onion mixture and bowties; mix well.

Serve with brisket or roast chicken in place of potatoes or rice.

Yield: 8 - 10 servings

Leftovers can be reheated in a microwave oven. Add a small amount of broth before heating.
