Minted Zucchini Salad
w/Proscuitto & MozzarellaWOW scale: 8
Skill required: Salad lover 1 medium-sized zucchini
1/4 teaspoon fine-grain sea salt
1/3 cup chopped or torn fresh mozzarella
2 thin slices of proscuitto, cut into ribbons
2 tablespoon chopped fresh mint
extra-virgin olive oil, for drizzling1. Prepare a pot of boiling water.
2. Meanwhile, using a vegetable peeler, shave the zucchini into long, thin ribbons.
3. Place the zucchini ribbons in a steamer basket and sprinkle them with salt; toss gently.
4. Place the steamer basket on top of the boiling water, cover and steam for one minute.
5. Shock the zucchini by rinsing them, in the steamer basket, with cold water.
6. Gently spread the zucchini out on a clean kitchen towel to dry.
7. Once the cooled zucchini has dried, place it in a medium-sized bowl and add the mozzarella, proscuitto and mint. Toss to combine.
8. Divide the salad between two small plates and drizzle each with olive oil.
Yield: Serves 2 (as a side dish)
